Fruit Ice Pops Ingredients

To make key lime ice pops you’ll need the following ingredients. A complete list of ingredients and quantities can be found in the recipe card below.

  • Graham Cracker Crumbs: You can buy graham crackers pre-crumbed, or blend whole graham crackers in a food processor until they turn to fine crumbs.
  • Greek Yogurt: Full fat greek yogurt adds a lovely fresh creaminess to the popsicles.
  • Coconut Milk: Full fat coconut milk is best for a creamy popsicle flavor.
  • Honey: Essential to add some sweetness to the popsicles, which taste a little tart without sweetening.
  • Key Limes: Smaller, and more tangy than regular limes, key limes can be hard to find. If you can’t find them in your grocery store, you can buy key lime juice online or see substitutions below for alternatives.
  • Lime Zest: You can zest key limes, but they are hard to find and they are so small it can take forever. So feel free to use regular lime zest instead.

Ingredient Substitutions

Key Limes: If you can’t find fresh key limes or key lime juice, you can also use regular persian limes.

The flavor will be a little different if you use just regular limes (although still amazing). To best match the flavor of key limes, you can also try a 50/50 blend of lime juice and lemon juice.

Equipment Needed

You will need a medium mixing bowl, a whisk and a popsicle mold (with integrated or separate wooden sticks).

How To Make Creamy Key Lime Popsicles

Here’s a quick overview of how to make key lime popsicles at home. For the full recipe and ingredient list, scroll down to the printable recipe card.

Step 1: In a medium mixing bowl add the yogurt, coconut milk, lime zest, honey, and lime juice. Whisk until smooth and well combined.

Taste for sweetness and add more honey if you prefer a sweeter popsicle.

Step 2: Fill each popsicle mold halfway with the mixture. Sprinkle a layer of graham cracker crumbs over the mixture, then fill the molds to the top. Top with another layer of graham cracker crumbs.

Step 3: Insert a popsicle stick into each mold and freeze for 4-6 hours, until fully set.

When ready to serve, run warm water over the outside of the molds for 10-20 seconds, then gently ease the popsicle out of the mold. Serve immediately and enjoy!

How To Store Popsicles

Popsicles need to be stored in the freezer. You can keep the popsicles in the popsicle mold in the freezer until ready to serve.

Alternatively, if you want to use the mold for another round of popsicles, you can remove the ice pops from the molds. Then wrap each popsicle individually in parchment paper or plastic wrap, place them in an airtight container (or freezer bag), then pop them back in the freezer.

The advantage of storing the popsicles individually is that your popsicles are ready to enjoy right away! Perfect for kids (and adults) who find the de-molding process a little frustrating!

Rachel’s Tips
  1. If purchasing whole graham crackers instead of pre-made crumbs, you’ll need around 4 full graham crackers to make 1/2 cup of graham cracker crumbs. Use a food processor to make the fine crumbs.
  2. Bottled or fresh key lime juice can be used in this recipe. 
  3. Regular (Persian) limes or a 50/50 mix of regular lime and lemon juice can be used instead of key limes (as they can be difficult to find).
